We utilize old-school techniques and start with only with the finest certified choice cuts of meat, always fresh and never frozen. Our brining, rubbing, resting and smoking processes and times vary significantly to provide a perfectly finished product, utilizing our secret recipe of hand blended rubs from a variety of 16 different spices and a proprietary blend of wood species for smoking. While we try to assure we always have your choice available, our finished brisket, rib and pork products take us 3 days to produce.
