Great Chicken Enchiladas by Lynette S via Insider Pages on 3/12/2010 We had Esther's Taco House cater a small event last December. We had the beans, rice, pork tamales, chiles rellenos, and chicken enchiladas. It was all wonderful, and the chicken enchiladas were the best I've ever eaten!
