In 1950, with a $500 loan from his father, Bill Miller opened a small poultry and egg business. Three years later Bill Miller Bar-B-Q began as a small fried chicken-to-go restaurant. Today Bill Miller is a family-owned and operated business with 75 locations in the San Antonio, Austin, Corpus Christi, and surrounding areas.

We take pride in cooking all our barbecued meats in pits smoked with 100% live oak wood. We offer a variety of meats such as brisket, sausage, bar-b-q chicken, pork spareribs, ham, turkey, and fried chicken. We specialize in the baking of bread and pies made fresh daily. Bill Miller Bar-B-Q believes in providing a good quality product over and beyond what is expected. Our family serving yours since 1953!

In Short
There really is a Bill Miller behind Bill Miller's, San Antonio's ubiquitous home-grown barbecue restaurant chain. Barbecued pork, beef brisket, chopped beef or barbecued chicken comes to your orange tray with sliced… Read Full Editorial

My Review by sandras1731009674 via Citysearch on 5/12/2014

Visited San Antonio this past weekend and the hubby has been bugging me to go to Bill Millers. I have eaten here once and was not impressed, he now understands my reasons for never wanting to go back. The servings were small the sauce i…

My Review by jims1910803301 via Citysearch on 2/25/2014

I love Bill Miller BBQ! Sure, there are plenty of other good BBQ places in San Antonio, but I still like Bill Millers regardless of all the negative reviews I've seen here.

My Review by mb1118713940 via Citysearch on 1/9/2014

NO MORE CONDIMENT BAR! Gone are the pickles, onions, white bread rolls, wheat bread rolls and butter for dine-in service, which made up for the average, but well priced food. The restaurant has been reduced to bare bone dining with no free…

rudys puts this place to shame by turb0pr0fess0r via Citysearch on 3/22/2010

I just had the ribs and brisket. The brisket tasted dry and plain. the sauce did not help compliment any of the flavors. The ribs tasted like i was eating unflavored pork, i tasted no smoke and barely and seasoning besides some pepper on…

Don't Bother by styrlink via Citysearch on 1/22/2009

This is the absolutely worst meal I have ever eaten - or attempted to eat in any restaurant, anywhere. We ordered the "lite" 1/4 chicken, which was very undercooked and so full of fat and grease as to render it inedible. \r The baked…

Bill Miller BBQ is Second to None! by UncaDave via Citysearch on 1/8/2009

I've been stationed in San Antone several times and have never found a better BBQ place both flavor and value-wise than Bill Miller. It's a standard issue, cafeteria-style BBQ spot all over the local region and their BBQ is very tasty and…

Best Bar-B-Q for the $$$$$$ by JDaet via Citysearch on 11/30/2008

Hey, I like brisket as much as or more than the next Texan, but there is more to great bar-b-q than just brisket. What about tasty, mouth-watering ribs; juicy sausage; a boatload of delicious sides; handmade pies and sinfully sweet tea,…

Worst BBQ I've ever had ! by a2e2b via Citysearch on 9/5/2007

I should have read review before I visited this BBQ joint. I ordered a sliced beef sandwich. I received chunks of bbq full of fat on a sesame seed hoagie type bun with little bbq sauce on it. The beef resembled corned beef with fat. The…

Gives BBQ a Bad Name by gvravel via Citysearch on 5/15/2007

Why Bill Miller's has survived these many years in beyond logic. The only good thing about this place are the sides (hash browns, pinto beans, green beans, etc..). The meats and the BBQ sauce are HORRID. There is a lean type of meat you…

Nothing compares by ambrosgela via Citysearch on 11/13/2006

I don't live in Texas anymore, but I would move back in a heartbeat for just one reason...Bill Miller Bar-B-Q! The brisket and accompanying sauce is amazing, the ribs fall off the bone. I'm salivating just thinking about it. Bill…

Try Somewhere Else For BBQ by cassiemelendez via Citysearch on 12/24/2005

This was the worst meal I have had in a long time. The beef bisket was fatty to the point of being unpalatable. The sides I had, homefries, beans, dinner roll, were unaccessable as well. The potatoes were charred, the bean were bland…

I've had better. by kfolse via Citysearch on 10/30/2005

While visisting San Antonio in July we were told to try Bill Miller's because they had the best BBQ. After agreeing to have lunch there I would have to disagree. Cheap? Yeah, but that's because you don't get a lot for a serving. Also, it…

Average Fast Food But Nothing More by josephah2000 via Citysearch on 8/27/2005

The food is average at best. If you don't have much time and are particular it is the place to go. It was good when I was a kid but now it just ok.

bill millers by atilla18 via Citysearch on 4/2/2004

What about the Malt House? by chitownckb via Citysearch on 10/16/2003

Bill Miller's is average at best. The food is bland and greasy and the fries are usually soggy. I will say they have great sweet tea and pretty good chicken. The best bargain in town is the Malt House. The menu has a greater variety…

Not as good as they use to be by microwolf84 via Citysearch on 7/7/2003

Was not as good as they use to be - their family BBQ meal that was suppose to feed 3 - 5 people was barely enough to feed 2. Serving of meat to feed 3 - 5 people was only 2 dry ribs and 4 thin slices of beef (one mostly all fat and not…

Weighs every last drop of fat! by kuoyc via Citysearch on 2/7/2003

Stingy on the meat. Weighs every serving to the last drop of lard. 1/4 lb of brisket and 3 very small sides are not much of a serving for a grown man.

Bad food by brianne989 via Citysearch on 2/7/2003

Lots of bones in the chicken, chewy squishy pieces of chicken, no flavor.....need I say more. (Awesome sweet iced tea)

No Way! by Lynnie523 via Citysearch on 2/7/2003

Although Bill Miller is decent food, I don't think it deserves a "best" adjective. It can be quite greasy, but, I do agree that it is cheap. You can get really full for a few bucks
